To showcase the best of Maryland\u2019s local bounty, Maryland\u2019s Best will host an exclusive Facebook Live recipe demonstration with <\/span><a href=\"http:\/\/www.johnshields.com\/\"><span style=\"font-weight: 400\">Chef John Shields<\/span><\/a><span style=\"font-weight: 400\"> on Tuesday, December 15, at 4 p.m. <\/span><a href=\"https:\/\/www.facebook.com\/MdsBestAg\"><span style=\"font-weight: 400\">Follow Maryland\u2019s Best on Facebook<\/span><\/a><span style=\"font-weight: 400\">.<\/span><\/p>\n<p><span style=\"font-weight: 400\">\u201cThis is a holiday season unlike any other, and it is more important than ever that we continue to support the men and women who have worked throughout the pandemic to provide fresh, local food products,\u201d said Secretary of Agriculture Joe Bartenfelder. \u201cThere is plenty of local meat, seafood, dairy products and hardy winter vegetables available for your holiday meal. Visit <\/span><a href=\"https:\/\/marylandwine.com\/\"><span style=\"font-weight: 400\">Maryland Wineries Association<\/span><\/a><span style=\"font-weight: 400\">, <\/span><a href=\"https:\/\/marylandbeer.org\/\"><span style=\"font-weight: 400\">Brewers Association of Maryland<\/span><\/a><span style=\"font-weight: 400\">, and <\/span><a href=\"https:\/\/marylandspirits.org\/\"><span style=\"font-weight: 400\">Maryland Distillers Guild<\/span><\/a><span style=\"font-weight: 400\">.<\/span><\/p>\n<p style=\"text-align: center\"><span style=\"font-weight: 400\">###<\/span><\/p>\n<p><b>Maryland Oyster and Baby Kale Pudding<\/b><\/p>\n<p><em><span style=\"font-weight: 400\">Serves 4<\/span><\/em><\/p>\n<p><em>Ingredients<\/em><\/p>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">2 tablespoons olive oil<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">\u00bc cup finely minced yellow onion<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">\u00bc cup finely chopped green onions<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 clove garlic, minced<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">4 generous cups baby kale (or tender greens), torn into pieces, with larger stems removed (approximately \u00bd pound)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">\u00bc cup water or vegetable stock<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Pinch of salt<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">6 slices bread, crust removed, buttered and cubed<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">6 ounces sharp local Cheddar cheese, shredded<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 pint shucked oysters, drained (reserve liquid for another use)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">3 eggs<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 teaspoon salt<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">\u215b teaspoon freshly ground black pepper<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">3 cups whole milk<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">\u215b teaspoon Tabasco sauce<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">3 tablespoons butter, cut into small pieces, for topping<\/span><\/li>\n<\/ul>\n<p><em>Directions<\/em><\/p>\n<ol>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Preheat the oven to 325 degrees F.<\/span><span style=\"font-weight: 400\"><br \/><br \/><\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">In a saute pan, heat the olive oil and add the onions, green onions, and garlic. Cook over a medium heat for about 4 to 5 minutes, or until softened. Add the kale and the water or stock and season with a pinch of salt. Raise the heat to high and cover the pan. Cook for 5 minutes, or until the water has completely evaporated. Remove pan from heat and allow to cool.<\/span><span style=\"font-weight: 400\"><br \/><br \/><\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Butter a 2-quart casserole dish. Place half of the buttered bread cubes in the bottom of the dish. Add the shredded cheese on top. Distribute the oysters and kale in the casserole and top with remaining bread cubes.<\/span><span style=\"font-weight: 400\"><br \/><br \/><\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Beat the eggs, salt, pepper, milk, and Tabasco together in a bowl. Pour the mixture over the casserole. Dot the top of the casserole with butter and bake for 1 to 1 \u00bc hours, or until a thin-bladed knife in the middle comes out clean.
